Black sesame Financiers adapted from joyofbaking
Makes 12 mini muffins
1/3 cup (5 tablespoons) (80 ml) beurre noisette (made from 1/2 cup (113 grams) unsalted butter)
1/4 cup (30 grams) all purpose flour
1/2 cup (50 grams) black sesame (grind with flour)
3/4 cup (90 grams) confectioners’ (powdered or icing) sugar
1/8 teaspoon salt
3 large (90 grams) egg whites, lightly beaten
1/2 teaspoon pure vanilla extract
Heat butter until foams, lower heat and cook until foam sinks and turns deep brown
Brush molds with this butter
Cool and strain browned butter
Grind flour with sesame seeds
Mix wet into dry
Bake in hot oven 200C for 5-10 mins
