Homemade muesli bars

A healthy snack, breakfast bar, lunch box treat, coffee break beauty or in my case lunch.

4 cups oats
1 cup coconut
1 cup dried apricots roughly chopped
1 cup almonds roughly chopped
1 cup dark chocolate roughly chopped
1/3 cup olive oil
1/3 cup agave nectar or honey
1 teaspoon dried ginger
1 teaspoon cinnamon
1 teaspoon chipotle powder (Obsession of mine, probably better without – learning difficulties)
2 egg lightly whisked
pinch salt

Mix everything and press into a sheet tray
Bake at 350F about 150C until edges are well coloured
Turn oven off and leave to cool for 15-30 mins
Remove let completely cool
Slice, eat and store

Leave the eggs out and it is muesli or granola as I now have to get used to calling it

Add some chai and/or flax seeds and it’s a protein bar full of those heralded omega 3′s

Don’t try and follow the recipe just use it as a guide
