I miss NZ. Wanted to jump on a plane and help did people out while I was stuck refreshing #eqnz tried to recreate vogels instead – cheat sour dough a cup of water and flour mix with a pinch of yeast and feed a little water and flour a couple of times a day until smells like stout.
Soak some wheat berries over night and blitz in the food pro = something like kibbled wheat
add some rye flour and it is getting close to the beloved vogels
Keep the dough nice and wet and rather than kneading fold as you would a ciabatta loaf
Hot oven, made steamy by throwing in half a cup of water a couple of times
