Beetroot, a egg and what else? Do we include cheese, pineapple, onion, bacon?
I used to hate beetroot, then I discovered that like all vegetables canning doesn’t do them any favours. Cut thin on a mandolin or grated raw they make awesome salad bases. Tom Colicchio from Top Chef doesn’t think a beet can be served al dente and in the case of a burger ingredient I agree with him. But – No! To tinned slop.
Braise them in ginger beer. As easy as putting beets into a oven dish, pouring in liquid, covering and chucking into a hot oven.

My take on the all important meat -2 to one Lamb to pork with a heap of diced onion and a hint of thyme. Lots of s+p as usual.
The bun- I didn’t make my own but think it should be home made sesame brioche. Instead a brought bun had to suffice.
Aioli - Blend a egg yolk with some mustard, vinegar, lemon juice, garlic, Worcestershire sauce and emulsify in oil. Season.
Lettuce, tomato, a fried egg and some pickled cucumber – heat vinegar, aromatics, water and sugar until dissolved and pour over sliced cucumber. Cool and fridge.
Tomato sauce – cook carrot, onion and tomatoes with malt vinegar and brown sugar until saucy.
Avocado?
Mushrooms?
Bacon?

meat, lettuce, cheese bacvon, avo, beetroot, tom sauce mayo/aioli.. mushrooms are yum in burger,but really have no place being there.. too soggy and small, always falling out.. pesky little buggers..
